Yorky's Pork Spare Ribs Recipe

Ingredients
  • 2.5 kg Pork spare ribs
  • Salt and pepper
  • 1 Lemon, thinly sliced
  • 1 Large onion, thinly sliced
  • 150 ml Tomato ketchup
  • 75 ml Worcestershire sauce
  • 1 tsp Chili powder
  • 1 tsp Salt
  • Dash Tabasco sauce
Method

Place the ribs in a single layer in a shallow baking tray, meaty side down and sprinkle with salt and pepper. Preheat the oven to 220 degC and roast for 35 minutes. Drain off the excess fat and turn the ribs over. Place the sliced onion and lemon on top of the ribs and roast for a further 30 minutes at an oven temperature of 180 degC. 

Meanwhile, combine the ketchup, Worcestershire sauce, chili powder, salt and Tabasco sauce in a saucepan and bring to the boil over a medium heat. Simmer for two minutes then pour the sauce over the ribs. Continue roasting the ribs for a further hour, basting occasionally. Add a little warm water if the sauce appears too thick.

Remove from the oven and serve hot.
